House Sorting Cupcakes

These cupcakes were created by Tina at Sugar Bean Bakers, with the assistance of Bakingdom for the vanilla buttercream recipe, in anticipation of the worldwide Harry Potter Book Night. Made with a cream filling and vanilla buttercream topping, these fun treats are a delicious way to Sort guests into Hogwarts Houses on the fly and useful for team activities. They’re also just a wonderful conversation starter at any Potter-themed event that is sure to create some fond memories of your first ever cupcake Sorting.   • 3 Tbsp. flour
  • 1/2 tsp. vanilla
  • 1/2 cup butter (at room temperature, not margarine)

Instructions
Cream Filling
  1. While your cupcakes are baking or should they already have been prepared, begin preparing the cream filling. In a small saucepan, whisk flour into the milk until smooth. Heat, stirring constantly, until very thick, thicker than pudding.
  2. Remove and allow to cool fully. You can sit the pan in an ice bath if you don’t want to wait.
  3. In your mixer, beat butter and sugar together until fluffy. Add vanilla.
  4. Once cool, add the flour/milk/vanilla mix to the butter and sugar and beat until fluffy. When finished, it will look like whipped cream but be much thicker. Note: You can also shorten this portion of the recipe by just squeezing a bit of tinted buttercream into the middle instead of the actual cream filling.
  5. Portion out into four bowls and tint one blue, one red, one green, and one yellow for the House colors. Set aside.
  6. After your cupcakes are cool, add your first color to a piping bag fitted with a tip. Stick your tip down into your cupcake and squeeze. You will see the cupcake puff up a bit. This is how you know you have enough. If you add too much, your cupcake will crack open.
  7. Repeat with the other colors. Scrape off any excess cream so the color will not show outside of the icing.
Vanilla Buttercream
  1. This section deals with the vanilla buttercream topping for the cupcakes. In a large bowl, or the bowl of a standing mixer, beat the butter for 3 minutes.
  2. Beat in the sugar and salt.
  3. Add 2 tablespoons heavy cream and whisk on high for 4 minutes, until fluffy. If frosting is too thick, add more cream, 1/2 teaspoon at a time, until desired consistency.
  4. Stir in the vanilla.
  5. Swirl on top of cupcakes, taking care to cover any hints of the color below.
  6. Add sprinkles and/or other decor if desired.
