Instructions
  1. Preheat the oven to 350F.
  2. Coat about 24 2.5" muffin cups with non-stick cooking spray. Set aside.
  3. In a bowl, mix ALL ingredients together by hand.
  4. Place a heaping amount of the mix into each muffin tin. (Note: These do not rise very much, so fill to almost the top of the muffin tin.)
  5. Bake for about 25 minutes, or until a toothpick comes out clean.
  6. Let cool for 5 minutes and remove from tins. Cool on wax paper.
  7. Store muffins with wax paper underneath. These are very moist and will stick together.
