Bethany gave us a great recipe, Scabbers cakes. It is so good that it may even be able to redeem Scabbers as a character!
Scabbers Cakes by Bethany
- 4 oz. butter
- 4 oz. caster sugar Caster sugar is a finer grain of sugar than granulated - you can take granulated sugar and grind it up (in a coffee grinder or food processor) if caster sugar is unavailable.
- 4 oz. self-rising flour To make self-rising flour, mix 1 cup all-purpose flour, 1 and 1/4 teaspoon baking powder, and a pinch of salt.
- 2 eggs
- 12-16 cupcake liners
Preheat oven to 350F (175C).
Lay out the liners onto the baking tray.
Cream the butter and sugar together until smooth.
Whisk the egg using a fork.
Add half of the egg into the mixture. Mix until even.
Add the rest of the egg. Mix until even.
Sift the flour into the mixture and fold it using a metal spoon.
Using a teaspoon, spoon about two teaspoonfuls of cake mixture into each liner.
Place in oven and cook for around 20 minutes (until golden brown).
Move to wire rack for cooling.
Sift the confectioner's sugar into a bowl and mix with warm water. Add more confectioner's sugar and water until the icing is thick enough to coat the back of a spoon.
Add a couple drop of green food coloring. Mix until a smooth, even color.
Spread the icing over the cupcakes and place a chocolate mouse in the middle of each one.
Sprinkle chocolate chips over the cupcakes to decorate. Enjoy!
