Warm milk in microwave for 40 seconds.
In bowl of stand mixer, dissolve yeast into milk. Allow to sit for 5 minutes, or until foamy.
Add first measure of sugar, applesauce, salt, eggs, and flour. Mix thoroughly.
Knead for 5–10 minutes with dough hook or until dough pulls away from sides of the bowl.
Place dough in an oiled bowl and cover with lightly oiled plastic wrap. Let dough rise in a warm place for about an hour or until doubled in size.
Preheat oven to 350°F.
Divide dough into 20 equal pieces.
Flatten each piece into an oval about 1/2″ thick. Top each with filling ingredients: about 17 raisins and a small amount of sugar and cinnamon. Roll dough starting with shorter side and then pinch the edges together so that it forms a tight seal.
Place rolls seam-side down on parchment-lined baking sheet. Cover with plastic wrap and allow to rise for 15–30 minutes.
Bake for 18–20 minutes, until lightly golden. Allow to cool on a wire rack.
