Butterbeer Cupcakes by the Collegiate Baker
Ingredients
Cupcakes
- 1 box yellow cake mix
- 1 cup cream soda
- 3 egg
- 1 stick butter unsalted, melted
- 1/2 cup butterscotch chips melted
Frosting
- 1 stick butter softened
- 3 Tbsp. cream soda
- 3 cups powdered sugar
- 2 Tbsp. butterscotch syrup
- butterscotch chips (for topping)
Instructions
Cupcakes
- Combine yellow cake mix, cream soda, eggs, melted butter, and melted butterscotch chips (in that order) in a large mixing bowl.
- Mix on medium speed for two minutes.
- Follow temperature and time directions as instructed on yellow cake mix box for 12 cupcakes.
Frosting
- Cream butter and cream soda by mixing on slow, then medium speed for approximately two minutes.
- Mix in powdered sugar, one cup at a time, for easy mixing.
- Mix in butterscotch topping.
- When cupcakes are cooled, cover each with frosting and top with butterscotch chips. Enjoy!
